So you want to reduce the risk of confusion and tension for your guests upon arrival. You do not want your customers going from table to table asking "Is this seat taken? If you make your living room into Word or another document program, you can always show their names in red or yellow if you know they have not yet responded. And then later they RSVP they are not present, simply remove them from the list of seats, and leave empty seat for someone else who may appear, but never responded.
